Obtained by cold-pressing only single-variety Taggiasca olives, harvested by beating and processed within 24 hours of harvesting, this extra virgin olive oil has passed stringent tests and a thorough panel test, an analysis that objectively evaluates all its sensory characteristics. Upon tasting, it offers a sweet, fruity aroma and a delicate, rounded flavor. It was the first Ligurian oil to be classified in the light fruity category at the "Ercole Olivario" award. Ideal drizzled on fish, for delicate sauces (mayonnaise), and in the preparation of refined desserts.
